Wine: 2009 “The Black Cask” Syrah
Aged in puncheons, this “Black” wine needed a bit of Viognier co-fermented…not for color, as it actually makes it darker (seriously), but to bring out a nice vibrant friendliness to an otherwise beast and monster of a grape. 30% whole-cluster fermentation made this wine a friendly beast, and if cellared for long enough it will reward your palate…but for as young as it is, it tastes soo good now!
